Samboosa: Traditional Delicacy in Saudi Cuisine

Samboosa, also known as Samosa in other regions, is a popular appetizer in Saudi Arabia, especially during the month of Ramadan. This savory pastry is filled with a variety of ingredients such as meat, cheese, or vegetables. Here’s how to make a traditional meat-filled Saudi Samboosa.

Recipe of Samboosa

1) Ingredients:

For the dough:

– 2 cups of all-purpose flour

– 1/2 tsp salt

– 4 tbsp oil (vegetable or olive oil)

– Water (as needed to form a dough)

2) For Filling:

– 1 lb (about 450g) ground beef or lamb

– 1 medium onion, finely chopped

– 1/2 tsp ground black pepper

– 1 tsp ground cumin

– 1 tsp ground coriander

– 2 cloves garlic, minced

– 1/2 tsp ground cinnamon

– Salt to taste

– 2 tbsp chopped fresh cilantro

– Oil for frying

3) Instructions of Making Samboosa : Step-by-Step

  1. Prepare the dough:

– First, in a large mixing bowl, combine the flour and salt.

– Then, add the oil and mix until the mixture resembles coarse crumbs.

– After that, gradually add water and knead into a smooth, pliable dough.

– Finally, cover the dough and let it rest for about 30 minutes.

  1. Prepare the Filling:

– Initially, heat a pan over medium heat and cook the ground beef or lamb until browned.

– Afterwards, add the chopped onion and garlic, cooking until they soften.

– Next, stir in the cumin, coriander, black pepper, cinnamon, and salt. Cook for another few minutes.

– Following this, remove from heat and stir in the chopped cilantro. Then, let the filling cool.

  1. Form the Samboosas:

– After that, divide the dough into small balls, then roll each ball into a thin circle.

– Then, cut the circle in half. After this step, wet the edges of the dough with a little water.

– Afterward, fold each half into a cone shape, sealing the edge, and fill with the meat mixture.

– Then, seal the open edge to close the samboosa. Repeat with the remaining dough and filling.

  1. Fry the Samboosas:

– Heat oil in a deep frying pan.

– Then, fry the samosas in batches until golden brown and crispy.

– Following this, drain on paper towels to remove excess oil.

  1. Serve:

– Serve the samboosas hot, accompanied by dipping sauces such as tamarind or mint yogurt sauce.
