Recipe for Making Sobia:

Ingredients:

– 1 cup of barley (or white/brown bread)

– 4 cups of water (for soaking)

– 4 cups of water (for blending)

– 1 cup of sugar (adjust to taste)

– 1 tsp of vanilla extract (optional)

– 1/2 tsp of cinnamon or cardamom powder (optional)

– Ice cubes for serving

Instructions:

  1. Preparation of Barley/Bread:

– If you are using barley, rinse it thoroughly under running water. If you are using bread, tear it into smaller             pieces.

-Then, soak the barley or bread in 4 cups of water for at least 4 hours, or overnight for best results.

  1. Blending:

– After soaking, blend the barley or bread along with the water it was soaked in until you get a smooth mixture.

– You can add more water if the mixture is too thick.

  1. Straining:

– Strain the mixture using a fine mesh strainer or cheesecloth to remove the solid particles. This step is crucial         for achieving a smooth texture.

  1. Flavoring:

– Return the strained liquid to the blender. Add sugar, vanilla extract, and cinnamon or cardamom powder if desired.

– After that, blend the mixture again until the sugar dissolves.

  1. Chilling:

– Refrigerate the Sobia for at least 1-2 hours before serving. It is best when you serve it cold.

  1. Serving:

–  Then, serve the Sobia over ice cubes in glasses.

– Optionally, garnish with a sprinkle of cinnamon or cardamom on top.

Variations:

– You can also add flavors like rose water, coconut milk, or almond extract to create different variations of Sobia.
