Saudi Arabia’s rich and diverse culinary heritage reflects the nation’s vibrant culture and history. From traditional dishes to modern dishes, Saudi cuisine offers a tasty array of flavors and textures that cater to every palate. One of the most famous dishes in KSA is Matazeez.
What is Matazeez?
Matazeez is a well-known dish in Saudi Arabian cuisine. Matazeez is a filling stew meal made with meat, veggies, and flavorful dumplings. Lamb is the typical meat option for this classic cuisine.

Ingredients:
For the meat and sauce:
– 500g lamb or beef, cubed
– 2 onions, finely chopped
– 3 tomatoes, diced
– 3 cloves garlic, minced
– 2 tablespoons tomato paste
– 1 teaspoon ground coriander
– 2 tablespoons olive oil
– 1 teaspoon ground cumin
– 1 teaspoon ground cinnamon
– Salt and pepper to taste
– Chopped fresh cilantro for garnish
– Flatbread or rice for serving

Instructions:
- First, heat olive oil in a large pan over medium heat. Then add the chopped onions and minced garlic, and sauté until softened and fragrant.
- Secondly, add the cubed lamb or beef to the pan, and cook until browned on all sides.
- Thirdly, stir in the diced tomatoes and tomato paste, mixing well to combine.
- Fourthly, season the mixture with ground cumin, ground coriander, ground cinnamon, salt, and pepper, to taste. After that, stir to evenly distribute the spices.
- Fifthly, reduce the heat to low, and cover the pan. Then let simmer for about 45 minutes to 1 hour, or until the meat is tender and cooked through.
- Sixthly, once cooked, remove the lid, and allow any excess liquid to evaporate if needed.
- Seventhly, Garnish the Matazeez with chopped fresh cilantro before serving.
- Finally, Matazeez can be enjoyed hot with flatbread or served over rice.
