Different regions are famous for specific dishes, such as the Hail region. In this region, one of the most well-known dishes on the Haili dinner table is “Haili Kebebah.”

Due to its widespread fame, the Culinary Arts Commission selected the “Haili Kebebah ” as the official dish of the Hail region. This dish is made from a mixture of lamb, rice, onions, lemon, and Haili red pepper.

“Um Tarek,” a resident of Hail, shared her 35-year experience in preparing this dish. She said that she learned it from her mother and grandmother. She emphasized that mastering the art of making this dish requires time and practice.

 

Ingredients & Recipe of Haili Kebebah

Um Tarek disclosed the ingredients and preparation method for the “Haili Kebebah.” She mentioned that the mixture includes rice, onions, tomatoes, and spices.

Then, she adds parsley, cilantro, mint, and dill to the mixture. After that, she uses grape leaves to warp the mixture.

Then she puts it in a cooking pot, and adds meat and onions. Afterward, water is poured in, and it is cooked on heat for two to three hours.

Um Tarek anticipates a significant increase in demand for Kebebah as the Culinary Arts Commission named the dish after the region in the in the initiative of “National Dishes and Regional Dishes Narratives”. Notably, this initiative was launched in early 2023.

Importance of “National Dishes and Regional Dishes Narratives” initiative

The initiative aims to celebrate culinary arts culture and invest in its symbolic value. Moreover, it seeks to document its diverse recipes.

The Commission works towards sharing these recipes among the general population locally and internationally.

In addition to that, it aims to preserve dishes as a facet of the cultural heritage of various regions in the Kingdom.
