Ark of Taste: Madinah’s Heritage Foods Gain Global Recognition
Madinah’s culinary heritage is gaining new global recognition, with 35 products from the region documented by the Saudi Culinary Arts Commission among 180 Saudi products featured in the “Ark of Taste.”
Established by the Slow Food Foundation, the global online registry aims to preserve heritage foods, empower the local communities that produce them, and safeguard the biodiversity and culinary traditions they represent for generations to come.

Celebrating Madinah’s Distinctive Food Heritage
Together, the listed products stand as a living testament to the remarkable diversity of Madinah’s food landscape, where agriculture and culinary traditions have evolved alongside the region’s history and culture.
From Al-Ais wheat and Al-Ais Barni dates to Hasawi mint and Al-Fiqra mountain honey, the selection brings together ingredients and foods deeply rooted in Saudi local production and inherited practices.

Madinah hummus, Shurek bread, balsam, Madinah cabbage, and Madinah jujube, or Nabq, further reflect the breadth and diversity of a culinary heritage shaped by the region’s outstanding environment and generations of local knowledge.
