Ruz Al Bukhari, a traditional dish revered in the Arabian Gulf, especially in Saudi Arabia, is a delightful culinary offering. This dish, notable for its rich flavors and aromatic spices, represents a fusion of cultural influences.

 

Ruz Al Bukhari: Nutritional Value & Variations 

Ruz Al Bukhari is not just a feast for the senses; it is also nutritious. The rice and meat provide carbohydrates and protein, while the nuts and dried fruits add vitamins and minerals. Additionally, there are variations of the dish, with some recipes using different types of meat or additional spices.

Recipe of Ruz Al Bukhari

Ingredients:

– 2 cups basmati rice

– 500g lamb or chicken, cut into pieces

– 1 large onion, finely chopped

– 3 cloves of garlic, minced

– 1/2 cup raisins

– 1/2 cup almonds, slivered

– 3-4 cardamom pods

– 2 cinnamon sticks

– 2 bay leaves

– 1/2 teaspoon ground cumin

– 1/2 teaspoon ground coriander

– Salt and pepper to taste

– Vegetable oil

– Water for cooking

Instructions:

1. Preparation of Ingredients:

– Firstly, wash the basmati rice thoroughly and soak it in water for about 30 minutes.

– Secondly, if using lamb, marinate it with salt, pepper, and a little bit of ground cumin and coriander. Then, set aside for at least 30 minutes.

2. Cooking the Meat:

– Thirdly, in a large pot, heat some vegetable oil over medium heat.

– Fourthly, add the chopped onions and sauté until they turn golden brown.

– Fifthly, add the garlic, cardamom pots, cinnamon sticks, and bay leaves. Then, sauté for a couple of minutes.

-Sixthly, add the marinated lamb or chicken to the pot. Cook until the meat is browned on all sides.

– Seventhly, add enough water to cover the meat and bring it to a boil. Reduce the heat, cover, and simmer until the meat is tender (about 40-60 minutes).

3. Cooking the Rice:

– Eighthly, while the meat is cooking, drain the soaked rice.

-Ninthly, in a separate pot, bring water to a boil, add the drained rice, and cook it until it’s about 80% done. Then drain the rice and set it aside.

4. Combining Ingredients:

– Tenthly, once the meat is tender, remove it from the pot, and set it aside.

– Eleventhly, in the same pot, layer the partially cooked rice over the remaining broth. Then, sprinkle the top with the remaining cumin and coriander.

– After that, place the cooked meat on top of the rice. Then, scatter the raisins and almonds over the meat.

5. Final Cooking:

– Finally, cover the pot and cook on low heat for about 20-30 minutes, until the rice is fully cooked and has             absorbed the flavors of the spices and meat.

6. Serving:

– Gently mix the rice and meat. Be careful not to break the rice grains.

– Serve hot, garnished with additional raisins and almonds if desired.
