– 4 cloves garlic, minced
– 2 tomatoes, chopped
– 2 tablespoons Mandi spice mix (a blend of cloves, cardamom, cinnamon, black lime, saffron, and other spices)
– Salt, to taste
– Olive oil
– Fresh cilantro and mint leaves for garnish

Instructions:

1. Preheat your oven to 350°F (175°C).

2. In a large baking dish or roasting pan, spread a layer of sliced onions and chopped tomatoes.

3. Rub the chicken or lamb shoulder with olive oil and sprinkle with salt and Mandi spice mix, ensuring it is evenly coated.

4. Place the seasoned meat on top of the onions and tomatoes in the baking dish.

5. Cover the baking dish tightly with aluminum foil and roast in the preheated oven for 2-3 hours, or until the meat is tender and cooked through. If using a whole chicken, ensure the internal temperature reaches 165°F (74°C).

6. While the meat is cooking, prepare the rice. Then, in a large pot, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant.

7. Add the rinsed Basmati rice to the pot and stir to coat the grains with oil.

8. Pour in the water and season with salt to taste. Bring the water to a boil, then reduce the heat to low, cover the pot, and let the rice simmer for 15-20 minutes, or until the water is absorbed and the rice is cooked through.

9. Once the meat and rice are cooked, remove them from the oven and fluff the rice with a fork.

10. To serve, place the cooked rice on a serving platter and top with the roasted chicken or lamb. Garnish with fresh cilantro and mint leaves.

11. Serve hot with your favorite condiments, such as spicy tomato chutney, tangy yogurt, and zesty pickles.
