Chicken Kabsa: One of Famous Dishes in Saudi Cuisine

Chicken Kabsa Recipe
1)Ingredients of Chicken Kabsa
- 2 cups of basmati rice
- 500g chicken
- 2 large onions, chopped
- 5 cloves of garlic, minced
- 1/4 cup of raisins
- 1/4 cup of sliced almonds
- 4 large tomatoes, chopped
- 4 carrots, grated
- 2 dried limes
- 1 tablespoon of Kabsa spice mix
- Salt to taste
- 4 cups of hot water
2)Instructions to Make Kabsa
- Firstly, fry onions in a pot until they turn golden brown.
- Secondly, add garlic, tomatoes, and carrots, and simmer for a few more minutes.
- Thirdly, add the chicken and brown it all over, then add salt, dried limes, and Kabsa spice blend.
- Fourthly, add boiling water to the pan, cover it, and simmer until the meat is cooked.
- Fifthly, add the almonds, raisins, and rice to the saucepan, cover, and simmer until the rice is soft and until the rice completely absorb the water.
- Finally, when the rice is fluffy, Kabsa is ready.
Pro Tip: For a smoky flavor, toss in a bit of charcoal when adding the rice. Then, before serving, cover and set aside for a few minutes.
